Grapes: Auxerrois, Sylvaner, Pinot Blanc, Pinot Gris and Chasselas, with a tiny bit of Riesling and Gewurztraminer.
Region: France> Alsace.
Notes: 13% Alc., Certified Biodynamic, native yeast, spontaneous fermentation, unfined, 8mos. on lees, very low sulfites (only at bottling).

Description: The Binners have been making wine in Ammerschwihr, France since 1770; Christian took over the domain in 1999 and doubled down on the traditional farming methods that were upheld by his father and grandfather. The Binner wines haven’t seen any added SO2 since 2013, and hence benefit from spending some time in the cellar in order to stabilize naturally. “As Marcel Lapierre used to say, natural wine should be good above all. No matter who you give it to, they should like its taste, without reservations,” Christian believes. “I see Alsace as one of the historical terroirs for wine, a place where the vine is really happy to be. There’s an incredible diversity of soils, little rainfall, and low disease pressure, making it a great place for natural winemaking,” - Christian Binner.

Cloudy golden raisin in color with aromas of yellow fruit and papaya. The palate exhibits polished tannins that seamlessly combnine with notes of yellow plums, papaya, and a touch of spice. This wine is medium-bodied and delicous with a soft clay-like mineral tone and sourdough yeast on the finish.

Food pairing: Cheese, fish (halibut), spicy dishes, poultry, Asian cuisine, egg dishes, mushrooms, oyster, pate, pork, rabbit, vegetable dishes, etc.
