Description: Owned and operated by Enrique Fonseca (known as "El Arquitecto"), the distillery is famous for its traditional production methods, unique aging process involving French and American oak, and a firm commitment to additive-free tequila. Master Distiller Enrique Fonseca distills agave predominantly grown in and around his highland hometown of Atotonilco el Alto. For this añejo expression, Enrique ages select tequilas initially in used Cabernet Franc wine barrels from the Loire Valley of France for a minimum of 14 months. The tequila is then extracted from the French oak and laid into toasted American white oak previously used to age either Canadian whiskey or Tennessee rye whiskey, for a minimum of I4 additional months, for a truly masterful balance of oak and agave flavors.
TEQUILA DEFINITION: A distillate made only with the Blue Weber agave plant, a succulent (but not a cactus!) Must be made in one of these five states of Mexico: Jalisco and parts of Guanajuanto, Tamaulipas, Michoacan and Nayarit.
Silver/Blanco: generally unaged.
Reposado: Meaning “rested,” aged in wood barrels for 2 months to 12 months.
Anejo: Aged in wood barrels between 1 and 3 years.
