Description: Nicolas Cheveau stewards his family’s 18 hectares in the Mâconnais and Beaujolais with remarkable fastidiousness, producing white Burgundy of precision, finesse, and longevity. Cheveau performs no batonnage, employs larger-sized wooden casks in general, and adds only modest amounts of sulfur dioxide (never exceeding 60 milligrams per liter in total). The relative warmth and generosity of the Mâconnais shows itself in Nicolas’s wines in subdued fashion; there’s a sense of restraint here that stops well short of austerity but imbues the wines with notable poise, and these are wines which emphasize clarity of line and brisk minerality over volume in general. 2018 is a highly successful vintage at Cheveau, one whose warmth and tendency toward richness meets Nicolas’s chiseled style halfway, and though the wines are slightly more viscous and exotic than usual, they do not want for balance.
