Description: Domaine Sérafin, established in 1947, produces wines from very old vines in Gevrey-Chambertin. Christian Serafin was making the wine since 1968, and officially took over from his father in 1988. One of the keys to the quality of these wines is Christian’s ability to acquire ideal parcels within the Cru villages now owned by the family. In the last 15 years, Christian has slowly retired and left the domaine to the 3rd generation of the Serafin family, daughter Karine and niece Frédérique. The domaine has 6 hectares of premium vines, mostly in Gevrey-Chambertin. They make Vin de Garde, age-worthy wines from very low yields with an emphasis on balance and purity. Fermented with the native yeast, are aged in a high percentage of new oak. The wines are left untouched in the barrel (no racking) until they are ready to be bottled, unfined and unfiltered.
