Description: Xavier Weisskopf founded Le Rocher des Violettes in 2005 after studying winemaking in Chablis and Beaune and earning his degree in viticulture and oenology. He quickly rose to the rank of chef du cave, making 4 vintages during his tenure. The farming of all his vines are certified organics, with the aim to allow these precious old vines to speak without obstruction. In the Loire Valley, the Malbec grape is known as Cot and is a difficult grape to grow in most regions of France. Xavier makes a Malbec that seems to be pretty consistent from year to year, I believe this is the results of the vineyard and terroir. Without manipulation, this wine maintains a deep purple color throughout. Aromas of graphite, iron ore, blackberries, and undertones of low hanging violets.
