Grapes: 100% Nebbiolo Region: Italy> PIedmonte> Novara. It is a fine and elegant wine with subtle tannins, bright cherry flavors and a persistent finish that again emphasizes the complex mineral composition of the underlying soils. Here, the noble Nebbiolo grapes are harvested from vineyards outside of the renowned Gattinara and Ghemme zones at the foot of Italian Alps, but still in hillside sites on the slopes above the towns of Novara. It is aged in huge Botte barrels for two years before bottling and then left to age an additional year before being released to the market. The vines are exposed to large variations in temperature, warm days married to cool nights: an ideal ambience for Nebbiolo, which benefit from the long growing season to reach proper ripeness while maintaining a lively acidity. Food Pairing: Hearty dishes with meats, dark sauces.
