Strength: 40% ABV (80 proof)
Description: Established in 1884 on the island nation of Barbados. Like all of the Cockspur rums, Fine Rum is a blend of column and pot-still rums brought down to bottled strength with coral-filtered well water. Cockspur rums are aged in select used, charred, American white oak barrels.
“The aroma of demerara sugar and sherried alcohol lead to smooth taste, that discovers a slight pepper note in the body evolving into a cinnamon-butter tone in the finish. In spite of being aged only a few years this is a fine cocktail mixing rum and is the most popular of the Cockspur rums.” -Ministry of Rum
Rum: Most rum produced is made from molasses, the by-product of sugar cane. A notable exception is the French-speaking islands, where sugarcane juice is the preferred base ingredient. Some producers work in batches using pot stills to add complexity. However, most rum production is done using column still distillation adding a fuller-bodied rum.
Aging and blending in many countries require rum to be aged for at least one year. This aging is commonly performed in used bourbon casks.
