Elio Ottin is a soulful, passionate winemaker with a small south facing 4 hectare sloping vineyard in the Mountainous Alps. The dry, cool climate of the Valley of d’Aosta is ideal for cool climate grapes and allows for a slow growing season, which helps enhance the aromatics of a wine. Most of the work is done by hand due to the rocky, steep formation of the hills. No pesticides, herbicides, or non-organic material of any kind. Distinctly Pinot Noir with all its fresh barnyard aromas. The palate exhibits a light-bodied, linear feel that expands its fruit expression on the mid-palate. Tart cranberry-cherry and saddle leather, with an undertone of granite and limestone. Bright red fruit and game on the finish.
Food Pairing: red meats, game, charcuterie, grilled green vegetables, artichokes, hard cheese, etc.
