Description: Arguably the best-kept winegrowing secret in California, San Benito County is home to the US’s largest strength of limestone soils for viniculture. Located just east of Monterey County, it’s one of the oldest and most storied regions in CA, but remains largely untapped. Hand harvested and sorted before being footstomped, the grapes ferment on their skins for four weeks prior to gentle pressing, then age on fine lees for 11 months in neutral barrique.Notes of chamomile, honey, dried apricot, persimmon, quince, and candied fennel seed.

Food Pairing: Frito misto, clams, shellfish, grilled or fried white fish, sea bass, baked tomatoes, etc.
