Description: Pierre Gaillard is a bit of a savant. When he was 12 years old he was caught plowing a nearby parcel with a horse. Since that time, his life has been about making great wine. Studied viticulture and enology in Beaune and obtained a gradute diploma in winemaking from Montpellier. Today Pierre manages a total of 77 hectares while respecting the 'raw material" with optimal hygiene and handpicked harvesting. Only ripe, healthy grapes are used. Fermentation done in barrel to fully express its finesse and freshness. This wine expresses wet stone, white flesh fruit, and a good dose of white pepper. Good minerality typical of the granite soil composition keeps the wine mineral and stone-driven. Excellent balance and perfect with food.
Food Pairing: Asian cuisine, sausage and onions, fish, butter sauce, roasted chicken, curries, pork, most chesses, etc.
