Description: Robert Talbott Vineyards have been in Sleepy Hollow for over 30 years and since that time Sleepy Hollow Pinot Noir has been consistently good. Silky tannins, lovely cherry fruit, sweaty musk, and cumin spice are some of the attributes that seem to shine. Sleepy Hollow vineyard is considered by some, Cali-grand cru. The renowned Talbott Vineyards craft estate-grown Pinot Noir inspired by the traditions of Burgundy. Head winemaker, David Coventry prides himself on putting the fruit first and maximizing vineyard expression in the wines he crafts. Beautiful garnet color in the glass, ripe and intense aromas of Bing cherry, cumin, boysenberry and hints of vanilla lift from the glass, and layers of rich black cherry are underscored by soft, silky tannins. A luscious finish follows with accents of minerality, dried herbs and oak.
Food pairings: Cheese (mild or soft, brie, feta, swiss), chicken, duck, eggplant, fennel, cumin-inspired dishes, lamb, salmon, veal, etc.
