Grapes: 70% Merlot, 20% Cabernet Sauvignon, 10% Cabernet Franc. Region: France> Bordeaux> Entre-Deux-Mers> Cotes de Bordeaux> Cadillac. Notes: Pauline Lapierre Dietrich (winemaker), 6 months in French oak (60% cuvee), sustainably farmed.
Description: Pauline Dietrich's parents were both children of winemakers and settle in the village of Rions, at the heart of Premieres Cotes de Bordeaux in 1989. This was the start of their family estate composed of complex soils, climates, and grapes, resulting in wines that are a true reflection of the Entre-Deux-Mers region. This wine speaks to a classic, Cotes de Bordeaux. Not too heavy (medium-bodied) with aromas of low hanging violets, black fruit, and earth. The palate reveals bright acidity, fine tannins on the mid-palate and dried black currants, vanilla, and roasted almonds. Nice earthy finish with bright fruit.
Food Pairings: Cheeses, charcuterie, red meats (braised, grilled, roasted), chicken, duck confit, osso buco, etc.
