Grapes: 100% Pinot Noir. Region: France> Burgundy> Auxerrois - Chablis. Notes: hand harvested, sustainable farming, stainless steel ageing.
Description: The estate was created in 1986 in between Auxerrois and Chablis, France. These areas are usually the coolest wine-growing regions in Burgundy, France. Pascale and Pascal Henry have been given the plot of land from their grandparents. Pascal wanted to work the land of his ancestors and created this small estate with his wife, Pascale. The estate vines benefit from an exceptional south/ southeast exposure with favorable cool climates that help retain the natural acidity and slow ripening of the grapes which makes for good acid/ alcohol balance, fruit, and aromatics. The wine displays deep violet and loam character with a touch of rose petal aromas. The palate reveals the former with a layer of dried cherries, cranberry, and stem.
Food pairings: Beef bourguignon, brie, camembert, roasted chicken/ turkey, duck, mushrooms dishes, rabbit, veal, tuna, mahi mahi, etc.
