Description: The winemaker Nicolas Joly is known to be the godfather of the Biodynamic farming resurgence.

Super complex wines that continue to evolve with aeration. Savennires makes some of the most age-defying white wines in the universe. The Clos de la Bergerie appellation are planted with Chenin blanc with an average age of 25 years. Over the last five years some of the vines were taken from cuttings selected from the oldest vines on the Coulée de Serrant vineyard (vines dating back to 1920, and a history of growing Chenin Blanc reaching to the 12 C). This careful selection reinforces the subtleties that the vineyard has expressed over the centuries.

Decanting is usually accepted and opening 24 hours before serving is not unusual.

Food Pairings: White meat in sauce, mild fish, goat cheese, apples, pears, asparagus, veggie risotto, Mediterranean seafood, sushi, smoked fish, etc.
