After years of making wines for others, in 2001 a new family moved into the tiny village in the heights of the Pyrenees Mountains to wrest old vines from coop production. Amazingly remote, the old vines atop this wild land were in the budget and in the proper state to invest in. Natural farming, wild yeast, minimal manipulations and low SO2 reveal the pure fruits, spices and flowers of the land in the wine’s flavor profile. Nice soft tannins and firm oak expressions with red fruits. Finishes with a roasted almond.
Food Pairing: Very versatile. aperitif, manchego, grilled tuna/swordfish, hamburgers, oxtails, veggie or meat stews, venison, etc.
