Grape: 100% Chenin Blanc. Region: France> Loire Valley> Coteaux du Layon- St. Aubin> Les Clos. Notes: Organic. Botrytis (Noble rot). No oak. Description: All made in tank. This is a 50:50 of noble rot and late harvest grapes from Clos de la Guiberderie and Clos du Pavillon vineyards. Philippe Delesvaux came to winemaking while studying agriculture on a cereal farm in the Loire Valley in the early 1980’s. By 1983 Philippe had purchased some vineyards and began producing some of the most concentrated botrytis affected wines the area had ever seen. A biodynamic farmer using natural yeast to capture the essence of the land.
