Aromas of spiced orange, almond, and caramelized pecans, the Amontillado Sherry is made from an excellent Fino Sherry, then undergoes an additional oxidative ageing when it no longer continues to feed the flor yeast, which dies. This subsequent ageing is the same as the process for the Olorosos. Best served slightly chilled. Bodegas Alvear is a major player in the Montilla Moriles appellation with its family history beginning 300 years ago.
