Domaine Ellevin is a family owned Domaine in which the father, Jean Pierre has been the head winemaker since 1975. His son, Alexandre has been working with father in the vineyards and cellar since 2004.
Flattering and delicate with aromas of white flowers and minerals. Smooth texture, good balance in mouth with nice acidity on the finish. The wine is aged in a stainless tank for 8 to 12 months with 9 months on the lees without batonage with intention of highlighting the characters of the grape and terroir without overwhelming earthiness that’s became to known Chablis style.
Food Pairing: Oyster, seafood, vegetable, soft cheese.
